- 8 cups of homemade chicken broth
- 2 plum tomatoes
- ¼ white onion
- 1 clove of garlic
- 4 limes for garnish
Preparing the Soup
To puree the tomato, onion, and garlic, cut them up and place them in your blender. Puree them together and set aside.
Fry the Fideo Noodles
When you’re stir-frying the noodles, heat up 3 tablespoons of vegetable oil to medium-high. When the noodles are golden brown and a few strings have turned brown, add 3 tablespoons of oil and continue cooking. Browning the noodles adds richness and depth to this soup.
Assemble the Soup
Pour chicken or vegetable broth over the noodles. Add the pureed tomatoes, onion, and garlic.Bring the soup to a boil.

How To Make Fideo Soup With Ground Beef
- Salt and ground black pepper to taste
- 1 (8 ounces) can tomato sauce
- 2 tablespoons ground cumin
- 2 tablespoons onion powder
- ¼ cup canola oil
- 1 (16 ounces) package fideo noodles
- 1 pound ground beef
- 3 tablespoons dried minced onion, divided
- 2 tablespoons garlic powder, divided
- 3 cups hot water, or as needed
- 1 cube beef bouillon
Cook the beef, half a cup of dried onion, 2 tablespoons of garlic powder, salt, and black pepper in a large skillet on medium-high heat for about five minutes; drain and discard grease. Transfer beef to a bowl.
- Cook and stir noodles in the hot oil for 3 to 5 minutes until they are browned.
- Using the same skillet, heat the canola oil until it shimmers.
- To the noodles, add the ground beef and water to cover.
- Stir in the tomato sauce, crushed red pepper, cumin, onion powder, beef bouillon, green bell pepper, salt, and black pepper.
- Ten to fifteen minutes is sufficient time to cook noodles, stirring occasionally.
Why Is My Fideo Sticky?
Toasting prevents the pasta from sticking together and provides a great flavor as well as preventing pasta from sticking if the pasta is not toasted. Stickiness occurs when enough liquid is not present in the pot and the pasta has no room to move.
Substitutes For Fideo
It is possible to substitute canned chicken broth for homemade broth when you do not have it on hand. If you are unable to find thin spaghetti, vermicelli noodles, or angel hair pasta, then break them into 1-inch pieces.
If you prefer a vegetarian/vegan soup, you can use vegetable broth rather than tomato, onion, and chicken broth. You can make a simpler version of this soup by using 12 cups tomato paste and 8 cups of water rather than the tomato, onion, and chicken broth.
Make It Vegan
You can substitute chicken or beef stock for vegetable stock, and add some diced veggies to the mix to turn your vegan fideo soup into a tasty lunchtime treat. We suggest serving it with diced avocado, minced green chillies and cilantro.
Make It Healthier
You can also toast the noodles without toasting them, and even though they will lose some crunch, they will still taste delicious and be healthier. Do not fry noodles. Rather, toast them slowly on low heat and then add them as directed in the recipe.
Tips and Tricks
- If you don’t eat it right away, the spaghetti will absorb almost all the liquid and the texture will change.
- If you wish to give your fideo soup a smoky taste, add a teaspoon or two of chipotle powder or smoked paprika, or you can roast the tomatoes and onions in a comal or iron skillet.
- Storing leftovers in the refrigerator for up to three days is easy if you place them in a container with a lid.
